Old vines, deep roots

Historic vines from 1982

In 1982, at Tenuta MonteOliveto in Vesime, Dolcetto was planted with the patience of someone who knows time is the real ingredient.

Those vines are still here today. More than 40 years of deep roots in the clay soils of the Asti Langhe, searching for balance, memory and mineral expression.

Old vines do not give large quantities. What they give is concentration, history and character.

Calimero Wine comes from here: from old roots and a winemaking choice that breaks the rules with elegance.

We challenged the rules

The classic Dolcetto d'Asti approach says whole cluster is not the norm, wood is expected, and color should be intense and dark. We chose a different path.

We vinified with 100% whole clusters, with no destemming. The intact bunches started fermentation in tank, inspired by the great Pinot Noirs of Burgundy.

The result in the glass

  • Luminous ruby color: stems absorb part of the anthocyanins, giving elegance and brightness.
  • Complex aroma profile: rose petal, black pepper, menthol and fine spice.
  • Vibrant palate: the stems contribute reactive, noble and precise tannins.
  • Irresistible drinkability: freshness and lightness make the next sip inevitable.

To preserve the purity of the fruit, we used stainless steel only, zero wood. Calimero Wine is natural, unfiltered and unclarified, with a minimal sulfur dose added only at bottling.

Calimero Wine does not look for compromise. It needs dishes that can match its freshness and vertical drive.

Served strictly at 12°C, it becomes a remarkable food wine for the Piedmont table.

Robiola di Roccaverano + hand-cut Fassona beef tartare

The vibrant acidity and goat-milk character of Robiola di Roccaverano create a perfect contrast with the wine's energy. The vertical tannin from the whole clusters cleanses the palate and lifts the finish.

  • Spiced fish soups or richer fish dishes

Outside the fashion, inside the tradition

There is a Dolcetto d'Asti that grew tired of clichés. It comes from old vines planted in 1982, but the real revolution happens in the cellar: 100% whole cluster, inspired by Burgundy, with no destemming.

The result is a luminous ruby wine with rose petal and black pepper, a vibrant, vertical and fresh sip. Stainless steel only preserves the fruit, while a minimal sulfur dose is added only at the end.

Do not call it a traditional Dolcetto. Calimero Wine is a natural, easy-drinking wine made to be served fresh at 12°C.

Very few bottles. A pure experiment. An immediate love story.
